Ingredients

  • 1 Calf brain
  • 1 Slice of bread soaked in milk
  • 100 ml Sunflower oil
  • Lemon juice
  • Salt
  • Pepper

Instructions

  • Keep the calf brain in cold water for at least an hour for all the blood and lood clots to come out. Change the water once or twice. Remove the brain from the water and remove the thin skin on top slowly so that the brain does not crumble. Wash it once more and put it to boil in lukewarm water, with salt and very little apple vinegar. Simmer for 20 minutes. Drain and the calf brain is ready.
  • After the brain has cooled down, combine it well with the slice of bread soaked in milk using a wooden spoon. Add oil little by little, as if you were making mayonnaise.
  • Season with fresh lemon juice, salt and pepper to taste and serve on a serving dish, with lettuce and olives, or with some finely chopped red onion sprinkled on top. Delicious!
