Authentic Traditional Romanian Easter Appetizer – Drob Recipe

This recipe right here is a traditional Romanian Easter appetizer, that most Romanians make for the Easter holidays platter. Drob is the Romanian meatloaf made from ground lamb organs, green onions, and other fresh Spring herbs. The recipe differs from region to region.

In fact, this appetizer is so popular during Easter in Romania, that the recipe differs from household to household.

The traditional Romanian appetizer here is how people make Drob (lamb meatloaf) in the Buzău region of Moldova. Moldova is the eastern and eastern-northern region of Romania. In addition to the meatloaf, this appetizer recipe also includes cheese-filled tomatoes, another popular Romanian appetizer.

Traditional Romanian Easter Appetizer – Drob Recipe

Drob is a popular lamb meatloaf dish, that Romanians make for the Easter dinner.

For the Tomatoes

  • 1 kg tomatoes
  • 300 g cow cheese
  • 1 tablespoon margarine
  • 1 bunch fresh dill
  • salt
  • pepper
  • garlic

For the Meatloaf

  • lamb heart, kidneys and lungs
  • pork liver
  • 3-4 eggs
  • 1 bunch fresh dill
  • 1 bunch fresh parsley
  • salt
  • pepper
  • bay leaves


  • Mix together the cheese, the margarine, the garlic and dill and season with salt and pepper.
  • Cut the tomatoes into halves and remove the inside.
  • Fill each tomato half with the cheese spread.
  • Boil the lamb organs and cut them into cubes.
  • Season.
  • Grind the raw pork liver and mix it with the eggs, fresh dill and parsley.
  • Combine all the meat together, and put it in a lamb coul, in a baking tray and cook in the oven.
  • Let the meat cake cool off and then cut it in slices on a platter.
  • Place cheese filled tomatoes next to the meat cake.
  • Garnish the platter with parsley and dill leaves.
