Rice Stuffed Tomatoes Recipe

Stuffed Tomatoes
- 12 Small tomatoes
- 2 Bell peppers
- 100 g Bomba rice
- Salt
- Pepper
Mayonnaise
- 1 Egg yolk
- 1 tsp Mustard
- 50 g Sunflower oil
Instructions
- Cut a lid from the tomatoes are remove their cores. Season the inside with salt and pepper and leave aside on a plate upside down to drain the juices.
- Boil the rice in a pot with water, drain well and mix with 2 tbsp of homemade mayonnaise. To make the mayonnaise, mix the egg yolk and mustard with a wooden spoon, and add bit by bit the sunflower oil, while stirring continuoulsy.
- Separately grill the two bellpeppers, remove their peels and finely chop them.
- Mix together the rice with mayonnaise and the finelly chopped bell peppers. Now your tomato stuffing is ready.
- Fill each tomato with the stuffing, and serve them on a plate, on a layer of fresh lettuce leaves. Enjoy!
